Vegetarian Vegetable Soup Recipe for everyone from Crikey Adventure Tours

Vegetarian Vegetable Soup is not only for vegetarians but suitable for everyone. It is good enough to make it as a meal by itself especially if served with our damper.

INGREDIENTS

  • Use whatever vegetables you have. You can even use 2kg of frozen mixed vegetables as your base.
  • As many of our meals on tour as possible I make from scratch and for this I would use
    • 2 onions chopped
    • 4-5 sticks of celery chopped
    • 3-4 carrots chopped
    • 1 turnip chopped
    • 1 swede turnip chopped
    • 1-2 parsnips chopped
    • 1-2 potatoes chopped
    • 1 red and 1 green capsicum (pepper) chopped
    • 1 tablespoon oil
    • 1/2 teaspoon Worcestershire Sauce
    • salt and pepper to taste
    • 12 cups of water
    • 250gm spaghetti

METHOD

  • Heat oil is large saucepan
  • Cook onion until soft (1-2 minutes)
  • Add all other ingredients except spaghetti
  • Bring to the boil and simmer for about 1-1 1/2 hours
  • Break the spaghetti up into small pieces and add to soup and cook for another 15 minutes.
Serve and enjoy a hearty meal.

P.S. If you do not particularly want a vegetarian soup, add soup meat bones when you commence cooking.
