Spicy Pumpkin Soup from Crikey Adventure Tours
Another one of our favourite recipes is Pumpkin Soup. This has a smooth consistency with a bit of a tang. INGREDIENTS - 1 clove garlic
- 40gm butter
- 1 large onion chopped
- 3 rashers bacon chopped
- 2kg pumpkin chopped
- 2 large potatoes chopped
- 6 cups chicken stock
- 1/2 cup milk
- 10 drops Tabasco sauce
METHOD - Melt the butter in a large saucepan
- Add onions and bacon stirring until onions soften 1-2 minutes
- Stir in pumpkin and potato
- Add stock, bring to the boil and simmer uncovered for about 20 minutes or until pumpkin is soft
- Blend in batches until pureed.
- Return to cleaned pan, add milk and Tabasco and heat through
- Serve and enjoy
