Our Pancakes recipe while on our all inclusive tours
Pancakes can be served for breakfast, as a desert for your meal or pre-cooked and served as a snack during the day. We often serve ours for breakfast, but also on longer trips cook them and serve them with margarine in the middle like a sandwich - great for when we go bush walking.
INGREDIENTS
1 cup self raising flour
pinch of salt
1 egg
1 cup of milk
butter for cooking
METHOD
Combine the flour, salt and egg.
Gradually add the milk and beat the mixture until it is smooth.
Let it stand for one hour (if you have the time).
Heat a frying pan and lightly rub with butter.
Pour 2 to 3 tablespoons of batter into the frying pan - tilting the pan until the batter is evenly distributed.
Cook until bubbles appear, flip the pancake over and cook the other side.
Serve with butter, golden syrup, maple syrup, sugar, lemon juice or with fresh fruit and yoghurt.
