Our Pancakes recipe while on our all inclusive tours

Pancakes can be served for breakfast, as a desert for your meal or pre-cooked and served as a snack during the day. We often serve ours for breakfast, but also on longer trips cook them and serve them with margarine in the middle like a sandwich - great for when we go bush walking.

INGREDIENTS

  • 1 cup self raising flour
  • pinch of salt
  • 1 egg
  • 1 cup of milk
  • butter for cooking

METHOD

  • Combine the flour, salt and egg.
  • Gradually add the milk and beat the mixture until it is smooth.
  • Let it stand for one hour (if you have the time).
  • Heat a frying pan and lightly rub with butter.
  • Pour 2 to 3 tablespoons of batter into the frying pan - tilting the pan until the batter is evenly distributed.
  • Cook until bubbles appear, flip the pancake over and cook the other side.
  • Serve with butter, golden syrup, maple syrup, sugar, lemon juice or with fresh fruit and yoghurt.
