Mushroom Soup Recipe we enjoy on our all inclusive camping tours.
Mushroom Soup is a great way to enjoy our mushrooms as a starter for our main meal. During our camping tours we have mushroom soup sometimes. INGREDIENTS - 500gm mushrooms, chopped or sliced
- 1 tablespoon butter
- 1 onion, finely chopped
- 2 teaspoons plain flour (for a thicker soup, use a couple more tablespoons of flour)
- 4 cups chicken stock
- "some thyme"
- 1 cup cream
METHOD- Cook the mushrooms and onion in the butter for about 5 minutes, until soft
- Add the flour, cook for 1 minute
- Add the stock gradually.
- Add the thyme
- Simmer for 2 minutes, stir in the cream, reheat and serve for a chunky soup.
For a smoother soup - - Simmer for 10 minutes, then mince with a Bamix or blender, stir in the cream, reheat and serve.
