Bubble and Squeak recipe from Crikey Adventure Tours
Bubble and squeak is a traditional English dish. It was usually made from left over vegetables and served with cold meat from the Sunday Roast - quite often served with pickles as well.
The main ingredients are potato and cabbage, but any left over vegetables are great.
METHOD
Mix all the left over vegetables together and season with salt and pepper.
Heat some butter or oil in a frying pan (heavy base is best) or barbecue hot-plate.
Place a good handful of the mixture in the pan and flatten.
Cook until brown then turn and cook the other side until brown.
Serve with your left over meat or eat by itself. Maybe add a bit of tomato sauce (ketchup) on top. Tastes great served with bacon and eggs for breakfast.
