Boy Scout Cobbler & other goodies From a gal in Kentucky!!

This is a yummy easy to make recipe!

Ya put some graham cracker crumbs or vanilla wafer cookie crumbs in the bottom of a cast iron dutch pan,mashing it down some evenly all on the bottom,and then a stick of butter in little dollups on top of that, add two big cans of peaches,, add some brown sugar to that, just sprinkle some on the top of the peaches enough to lightly cover em, and another layer of the cracker or cookie crumbs, put a lid on it, set it directly over some hot coals, or if ya have to use a cooking stove etc then set it over a nice flame but not too hot. It'll be a while for it to cook,, twenty minutes to 45 minutes depending on your heat. but boy when it's done and the smell gets to ya you will surely love it! ;)
* extra tip: make sure ya have something sturdy ta get that dutch oven out of the hot coals, and also for removing that lid cause it gets pretty hot!! Don't burn yourself!! :O

I live in Kentucky, USA and my son was in Boyscouts so I had some fun too by joining in right with em!

Another recipe we liked to make:

Hobo Burgers:

Make yourself a hamburger patty or some other type of ground meat, add a slice of onion on top, a few slices of carrot, and a slice of bacon or two, wrap that up in aluminum foil and set it on some hot coals or in a stove pan. You can arrange several in a pan if ya wanna.
Let them set there and cook for a bit and then, using an oven glove or a stick (for a wood fire) remove em. If in a pan remove the pan from the fire and let that set and cool off a little before handling. The idea is to let em cool a bit and then open em up and put that between two slices of bread, yumm yumm!! Apply whatever ya want for condiments if available!
We use ketchup, mustard, and pickles!

Pigs in a Poke Recipe:

A package of hot dogs, and a can of biscuits or make your own homemeade biscuits if you are real adventurous!!

What you are gonna do is to take them hot dogs and wrap em in the biscuits, smear some butter on the dough so it won't stick to the foil too, and then put some aluminum foil around em! Put em in some hot coals or in a pan on a cooking stove and leave em till they smell done!
That's all!! Take em off the fire or hot coals, let em cool a tad, and enjoy!!

Basic Campfire Stew:

potatos, onion, carrots, celery, can of some sort of beans, and some meat, whatever ya have that works for stewin! Oh and some water ta cook it in!! Throw it all together and let that sucker cook till it be done!


Family Recipe Basic BBQ Kentucky Style:

Ingredients are:

A tall can of tomato juice or V8 juice, a medium onion minced, tobasco sauce, brown sugar or molasses, a lemon sliced up, and about three cups of white vinegar.(if you are allowed to you can add a can of beer or some good ole Kentucky whiskey to this mix) lol!! At boyscout camping trips etc. no alcohol of course! ;)

Cook this up for a bit, simmering it, before ya need to cook the meat. You can use this with just about any kind of meat you want ta use!!

*special tip: Save the skin and the cast off parts of that onion ya chop up, as that is gonna go on the hot wood coals if you are cookin that ways which is best btw!!!

When you start cookin this the smell is gonna be soooo good let me tell ya's!!! Especially if y'all use the sorta wood etc that is good for flavoring meats!

some more extra tips:
1. Have a little water handy in case of flare-ups while the meat is cookin cause ya don't wanna scorch it!! Yucks!
2. As it gets closer to done ya wanna maybe move it away from the hotter part of the fire so it don't burn or scorch.
3. Try to make sure the coals are spread out for even heat as this makes all the meat cook better.
4. Nice hot coals with no flames and away from winds that would mess with the heat is best. if ya are using wood then it takes a while for that to cook down to hot coals,, or you can use what we call charcoal. or :( other heat source.

When you throw the meat on to cook you need something like the rack from a stove so the meat can get the full benefit of the wood heat! ;) (or if ya hafta,, :( I reckon you can cook it on a grill with alternative heat) Plus, the meat looks cool with the lines on it!

If you have access to some butter or margarine then melt some of that and dab it on the meat while it's cookin! It will seal in the juices. Around here we also like to have a can of beer handy so's we can drink some of it and pour some over the meat too while it's cookin!
Have some fun,, and wait till ya try this!!


Chili:

One can of tomato juice, some ground meat,(we use ground beef), a medium onion chopped, and a can or two of pinto or red kidney beans. Spices consist of cumin, paprika, a little oregano, and cayenne pepper if you can get it.
(cumin mostly being the spice that makes it taste like chili) and a little bit of flour to thicken the sauce with (probably about two tablespoons,). Mix all these spices and the dry flour together.
Now what ya do first is to cook up the ground meat breaking it up into tiny pieces as ya go. Add the chopped onion to the meat while it's cooking. When that's done, add the spice/ flour mix and stir that up real good. Add your beans, and then add the tomato juice. Stir all that up, and then let cook for about 10 more minutes but don't let it scorch none!! You can add a little bit of water if it seems to be getting too thick. Ya want it to be a little soupy but not too much.

It won't be too long till it's done and you can grab ya a bowl or something and throw that in and start eating it!! We serve it with crackers!! And if ya have it, some hard cheese!! Just grate some off and onto your chili!! :D It's good!!!

Another version is White Chili:

About the same deal as before except instead of ground beef ya use some sort of white meat like chicken, or pork, etc, and a jar/can of salsa instead of the onion and tomato juice. And ya add some sort of a white cheese into it while it's cooking, and use white beans of some sort! It's all so good!!

Simpler Camp Cookout Stuff:
If ya want some simpler fare then we also just take some hot dogs and put em on a stick and hold em over a campfire or some heat and let em cook a bit! Take some bread or a hot dog bun, wrap it around the hot dog, and slide it off the stick and eat it!!
Then we would take some marshmallows and slide them on the sticks hold em over the fire or some heat till they brown a little or,, lol some kids prefer them ta burn a little, and then have some graham crackers and put the melted marshmallows on that along with a Hershey's Chocolate candy bar! It's called S'mores!!
I don't know too many people, kids and adults, who don't like these things!
